Low-fat, creamy mushroom and broccoli soup, with tofu.

Recipe Ingredients for Creamy Mushroom, Broccoli, and Tofu Soup

1 tbsp olive oil
4 cloves garlic
4 tbsp flour
3 cups mushrooms, chopped
1 cup broccoli, chopped
2 cups skim milk
6 tbsp egg whites
1 cup nonfat sour cream
1 lb Tofu, Silken, Lite
2 cups vegetable broth
1 tsp salt
1 tsp pepper

Recipe Directions for Creamy Mushroom, Broccoli, and Tofu Soup

Saute the garlic in olive oil. Add the mushrooms and broccoli (which should each be chopped chunky, but bite-sized). After boccoli is bright green and mushrooms have shrunk, add the flour. Stir. Add the broth. Let simmer. In a separate container, combine the egg whites and dairy. Beat well. Add to the broth slowly, while stirring. Add tofu. Simmer.
