The kids don't know the difference between these and real mashed potatoes, compare to traditional mashed potatoes and regular ingredients. Theirs is 450 cals, 16 g fat, & 70 carbs! Yikes!

Recipe Ingredients for Creamy Mashed Cauiliflower

32 oz Cauiliflower
60 g Low Fat Sour Cream 4 Tbsp
56 g Low Fat Cottage Cheese 1/4 Cup
56 g Fat Free Shredded Cheddar Cheese 2 oz
14 g Parkay Squeeze 1 Tbsp
35 g Fat Free Ranch Dressing 2 Tbsp

Recipe Directions for Creamy Mashed Cauiliflower

  1. Boil cauiliflower for 15-20 mins.

  2. Puree ingredients in food processor until well blended BUT not too much or they will be very thin.

  3. Add seasoning to taste.
