Recipe Ingredients for Creamy Manhattan Clam Chowder #2

410 g potatoes
1/2 large onion
600 g cod
90 g unsalted bacon (6 slices)
1 tbsp olive oil (for fish)
2 stalks celery
4 large carrots
2 medium sweet peppers
284 g can of canned clams
568 ml skim milk
1 1/2 can tomato soup

Recipe Directions for Creamy Manhattan Clam Chowder #2

  1. Brown bacon in a large skillet; add onions and cook until onions are tender. Remove bacon mixture and add fish to brown. Add a little oil unless you have bacon grease.

  2. Place potatoes, carrots, celery on bottom and around sides of slow cooker.

  3. Transfer bacon & onion mixture to slow cooker and add remaining ingredients. Cover and cook on LOW for 7 to 9 hours, or high for 3-4 hours. Potatoes should be soft and core temperature of soup should be about 180C for food safe handling.

  4. Serves 10.
