Recipe Ingredients for Creamy Linguini with Vegetables

1/2 cup onion, chopped
10 oz. mushrooms, chopped
1 clove garlic, minced
1 fresh basil to taste
4 oz. fat free cream cheese
9 oz. spaghetti (linguini is better)
5 cups spinach
3 plum tomatoes, chopped
1/2 cup Parmesan, fresh- may omit
1 salt and pepper to taste

Recipe Directions for Creamy Linguini with Vegetables

  1. saute onion in Pam sprayed pan

  2. add mushrooms

  3. add garlic and basil

  4. stir in the cream cheese till melted

  5. salt and pepper to taste

  6. meanwhile cook the linguini al dente, adding the fresh spinach in the last minute or two

  7. Toss all together, adding the fresh tomatoes and Parmesan last.
