I made this recipe up by combining a few different ideas from other recipes I saw online, and it came out awesome so I'm sharing it here!

Recipe Ingredients for Creamy Italian Tomato Perch on a Roasted Potato Bed

16 oz Ocean Perch, Atlantic
4 oz Idahoan Mashed Potatoes Roasted Garlic
1 1tsp Olive Oil
1 tsp Oregano, Ground
1 tsp Italian Seasoning
2 clove Garlic
1 large Onions, Spring Or Scallions
1 cup, chopped Onions
8 oz Whole Tomatoes In Tomato Juice
6 tsp Sour Cream
1 tbsp Parsley, Dried
1 large Egg, White
1 serving Mayonnaise Dressing

Recipe Directions for Creamy Italian Tomato Perch on a Roasted Potato Bed

  1. In a pot, heat olive oil and saute onion, green onion, garlic until tender. Add Italian seasoning, oregano and parsley with tomatoes in juice and sour cream and simmer for 5 minutes. Set aside.

  2. In a baking dish, spread out the dry roasted garlic mashed potatoes on the bottom.

  3. In a small bowl, separate the egg and ONLY use the egg white.

  4. Beat the egg white until fluffy.

  5. Add the mayonnaise and beat until smooth.

  6. Lay the perch fillets in the baking dish, coating with the potato mix.

  7. Coat each fillet with the egg and mayo mixture.

  8. Bake DRY at 450 degrees for 10 minutes until the topping is crispy brown.

  9. Then carefully take out of the oven with potholders, coat each fillet with half the grated Parmesan cheese, then spoon the creamy tomato sauce mixture on top and sprinkle the remaining half of grated Parmesan cheese (add a tbsp of water if necessary for the potatoes).

  10. Bake again for another 10-15 minutes and Enjoy! Ta-da!
