Creamy Pumpkin and Butternut Squash Soup

Recipe Ingredients for Creamy Harvest Soup

20 oz Butternut Squash, frozen
3 medium sweet potato, cubed
1 medium onion, diced
2 cups applesauce, unsweetened
3 medium carrots, cubed
30 ounce Pumpkin puree
28 ounce Chicken Broth, 99% fat free
2 tbsp. Ginger Root, grated
1 tsp. Thyme, ground
1 tsp. Sage, ground
1 tsp. Cinnamon
1 Nutmeg to taste
2 tbsp. olive oil
3 tsp. chicken stock
6 cups water
1 cup light cream (optional)

Recipe Directions for Creamy Harvest Soup

  1. In Saucepan over medium heat olive oil, ginger, carrots, and onions.

  2. Add broth/chicken stock, water, squash, sweet potatoes, applesauce, pumpkin, thyme, sage, nutmeg, and cinnamon.

  3. Bring to a low boil, turn heat down to low.

  4. Cook for about 1 to 1 1/2 hour until liquid reduces and vegetables are soft.

  5. Remove from heat and let cool slightly.

  6. Using immersion blender or food processor, blend until smooth.

  7. Stir in 1 cup light cream.

  8. Garnish with fresh thyme and serve.

  9. Makes approx. 10-12 servings
