28 oz Organic Vegetable Broth
1 cup (8 fl oz) Water
0.75 cup Cornmeal, Degermed, Enriched, Yellow
0.5 tsp Spices Ground Black Pepper
2 oz Gorgonzola Cheese
2 tbsp Extra Virgin Olive Oil
2 small Squash, Summer, Zucchini, Includes Skin
3 tbsp Minced Garlic
1 small Squash, Summer, All Varieties
0.25 cup Wheat Flour, Whole-grain

Recipe Directions for creamy gorgonzola polenta with summer squash saute

  1. The zucchini and squash need to be halved lengthwise and sliced

  2. Combine 2 1/2 cups broth and 1 cup water in a small saucepan. Bring to boik. Slowly whisk in cornmeal and pepper until smooth. Reduce heat to low, cover and cook, stirring occasionally until very thick and no longer grainy, 10 to 15 minutes. Stir in Gorgonzola; remove the polenta from the heat.

  3. Meanwhile, heat oil in a large nonstick skillet over medium high heat. Add garlic and cook, stirring constantly until fragrant, 30 sec to 1 min. Stir in zucchini and squash and cook. stirring occasionally until starting to soften and brown in places, about 5 min. Sprinkle flour over the vegetables; stir to coat. S in the remaining 1 cup broth and bring to a boil, stirring often. Teduce heat to medium low and simmer, stirring occasionally, until thickened and the vegetables are tender, 1 to 3 minutes, stir i basil; serve the saute over the polenta
