Recipe Ingredients for Creamy Garlic Pasta w/ Shrimp & Vegetables

6 oz spaghetti, whole wheat
12 oz raw shrimp, medium
2 cups asparagus, thinly sliced
1 large red bell pepper, thinly sliced
1/4 cup pine nuts, toasted
3 cloves garlic, chopped
1 1/4 tsp sea salt
1 1/2 cups nonfat plain yogurt
1/4 cup parsley, chopped
3 tablespoons lemon juice
1 tablespoon extra virgin olive oil
1/2 tsp black pepper

Recipe Directions for Creamy Garlic Pasta w/ Shrimp & Vegetables

  1. Bring a large pot of water to boil. Add spaghetti and cook 2 minutes less than the package directions. Add shrimp and vegetables and cook until the pasta is tender and shrimp are cooked, 2-4 minutes more. Drain well.

  2. Meanwhile, mash garlic and salt in a large bowl until a paste forms. Whisk in yogurt, parsley, lemon juice, oil and pepper. Add the pasta mixture and toss to coat. Serve sprinkled with pine nuts.
