Delicious pasta dish from one of the Weight Watchers cook books. Goes well with chicken for some extra protein.

  1. Boil a pot of water for the pasta. Cook according to the package, adding the washed asparagus (cut into approx. 1.5 inch pieces) three minutes before the end of the cooking time. Drain.

  2. While the pasta is cooking, saute the chopped shallots (I guessed on the number of ounces; it should be about 6 shallots or so) in the olive oil and garlic for a minute or two until they are softened.

  3. Add the mushrooms (the original recipe calls for a half pound of shiitake and a quarter pound of crimini, but we used all shiitake and it worked; I think portabella would be great for this recipe, as well) and chicken broth and simmer for a few minutes until mushrooms are cooked down.

  4. Add the half and half and heat through.

  5. Add the pasta and asparagus and toss to coat.

  6. Top with shaved parmesan, if desired.
