Creamy Curried Caulifower Soup Recipe

Recipe Ingredients for creamy curried caulifower soup

2 tbs olive oil
1/2 cup chopped onion
4 cups cauliflower florets
1 1/2 tbs curry powder
1/2 tsp cumin
1/2 tsp ground coriander
1/4 tsp ground nutmeg
1 tbs minced garlic
1 medium potato
4 cups chicken broth
1 cup milk
1 tsp chili paste or hot sauce optional
1 tsp salt

Recipe Directions for creamy curried caulifower soup

  1. In lg heavy pot heat oil over med-hi heat. Add onion and cook ~ 2 min. stirring often. Add cauliflower and stir around, sprinkle in spices and garlic. Stir and cook ~ 1 min. Add potatoes, broth and milk. Cook 20 min or until cauliflower and potatoes are tender.

  2. Remove soup from heat and puree in small batches. Return soup to pan, adjust seasonings add chili paste if desired. At this point soup can be cooled and refrigerated for up to 4 days.

  3. Serve hot along with rustic cracker or corstini. Garnish with a small dollop of fruit chutney and sprinkle with parsley
