Cucumbers in a creamy Greek yogurt and sour cream dressing, accented by a touch of garlic and a good helping of dill.

Recipe Ingredients for Creamy Cucumber Dill Salad

3 cucumbers
1/4 medium red onion
8 oz Greek Yogurt
1 cup sour cream
1 teaspoon garlic powder
2 tablespoons dill weed
1 teaspoon sugar
1/4 teaspoon ground pepper

Recipe Directions for Creamy Cucumber Dill Salad

Clean the skins of the cucumbers. If store bought, Use dish soap to remove vegetable oils typically applied by your friendly grocer. Slice cucumbers thinly and spread into a paper towel lined casserole dish or anything with sides and a broad base. Sprinkle generously with salt. Do in layers until all cucumbers are finished. Continue adding by slicing red onions and placing on top of salted cucumbers. Let sit in refrigerator for a minimum of 4 hours or overnight. Rinse and pat dry in paper towels. Afterwards, combine all remaining ingredients and add to vegetables. Place in an airtight container and refrigerate for a minimum of 2 hours so that you may enjoy the full flavor of the sauce and the vegetables. If you would like to use fresh dill weed (not mature dill, like for pickles) then double the amounts of fresh or add to taste. Additionally if you have any dill pollen you may want to amp up the dill flavor and throw some of that in too, about 1/2 teaspoon or to taste.
