Makes 4 servings



Love, love, love, love these. A childhood favorite for me, for sure. The best way to cook them is to use a well seasoned cast iron frying pan. You can use cream or milk instead of the half & half.

Recipe Ingredients for Creamy Corn Fritters

4 cups fresh corn kernels
1 egg
1 cup flour
1 1/2 teaspoon baking powder
1/2 cup half & half
3 tbs butter

Recipe Directions for Creamy Corn Fritters

  1. mix together first 5 ingredients in a bowl

  2. batter will seem like pancake batter- just w/ corn in it

  3. preheat frying pan w/ about 1/2-3/4 TBS of butter over medium-high heat

  4. turn down to medium once butter begins to brown

  5. spoon large tablespoons into pre-heated pan

  6. cook for 3-4 min on each side

  7. add 1/2 TBS to pan between batches of batter
