Recipe Ingredients for Creamy corn and Clam Chowder

1 tablespoon butter or margarine
1/2 cup onion, finely chopped
1 tablespoon flour
7 1/2 oz clams, minced, canned, liquid reserved
1 cup corn kernels, fresh, canned, or frozen
1 1/2 cups skim milk
1/4 teaspoon thyme
1/8 teaspoon cayenne

Recipe Directions for Creamy corn and Clam Chowder

  1. melt butter in a medium saucepan over medium heat. Do NOT use a non stick pan. Add onion and cook until tender and translucent, about 3 min.

  2. Stir flour into butter. Cook, stirring, for one minute to make a roux. add reserved liquid from clams and sir well to combine with roux. Add corn, clams, milk, thyme, and cayenne. Simmer 5 minutes.
