Lucious creamed beef with half and half over baked potato half.

Recipe Ingredients for Creamy Chipped beef

12 oz Dried Beef
3 medium (4-1/8" long) Onions, Spring Or Scallions
0.25 serving Flour
1 tbsp Butter
2 potato large (3" to 4-1/4" dia) Potato, Baked, Flesh And Skin

Recipe Directions for Creamy Chipped beef

Melt tbsp butter in pan and saute either one shopped shallot or three green onion sliced, tops and all. Add tbsp flour and make roux. Allow to cook for a minute, then slowly add cup of half and half. Allow to thicken, stirring occasionally. Chop dried beef and rinse to remove excess salt. Add to thickened sauce and allow to heat through. Serve over one half of a large baked potato.
