Recipe Ingredients for Creamy chickpea, squash and spinach curry

2 cups chickpeas, cooked
150 grams spinach, raw, destemmed
2 1/2 cup winter squash, steamed or boiled, cubed
2 cloves garlic, minced
1 cup soy milk, light
2 tablespoons curry powder
2 tablespoons canola oil, separated
1/2 teaspoon coriander
1/2 teaspoon salt
1/2 teaspoon cayenne
1/4 teaspoon turmeric
1/4 teaspoon black pepper

Recipe Directions for Creamy chickpea, squash and spinach curry

  1. First, prepare the sauce: In a bowl, stir together soy milk, curry powder, the other tablespoon of canola oil, coriander, salt, dried chili peppers, turmeric and black pepper. You can adjust spices to taste.

  2. Put 1 tablespoon of canola oil, minced garlic, cooked chickpeas, and cooked squash in pan and fry on medium for 3-5 minutes, stirring very frequently. Add a splash of water, then mix in spinach leaves. Continue cooking on medium, stirring frequently, for 4-5 more minutes until spinach leaves start getting soft. Add more water if necessary.

  3. Once the spinach leaves have begun softening, pour the sauce over the chickpeas and vegetables and continue cooking over medium heat for 4-5 more minutes, stirring frequently.

  4. Serve alone or with brown rice or quinoa.
