Recipe Ingredients for Creamy chickpea and rosemary soup

3 tbsp olive oil
5 garlic cloves
1 tbsp chopped fresh rosemary
45 ounces chickpeas (3 cans)
1/2 tsp crushed red pepper flakes
48 ounces vegetable stock (6 cups)
2 tbsp fresh lemon juice

Recipe Directions for Creamy chickpea and rosemary soup

  1. Saute garlic and rosemary until garlic begins to brown.

  2. Add chickpeas, stir to coat and cook for a few minutes.

  3. Pour in stock, bring to boil and then simmer for 30mins.

  4. Let cool slightly and blend for desired consistency.

  5. Return to pot, heat gently and add lemon juice.

  6. Serve when hot
