A healthy and simple chickpeas soup. You can replace the chicken cubes for vegetable and make it 100 percent vegetarian. And also use olive oil instead of the margarine.

Recipe Ingredients for Creamy Chickpea (Low-Cal) Soup

1 Cube(10 g) Chicken Stock Cubes
4 clove(3 g) Garlic
1 serving (Becel) Margarine Original
5 serving Chickpeas, pre-cooked, canned
950 grams Water
1 tsp Paprika
1 tsp Cinnamon, Ground
30 grams Lemon Juice

Recipe Directions for Creamy Chickpea (Low-Cal) Soup

  1. 1) Heat the margarine over medium heat and add garlic and herbs/spices.

  2. 2) Cook, stirring constantly, until the garlic starts to brown, about 1 minute.

  3. 3) Add chickpeas and cook 2 minutes, stirring constantly. Add chicken broth and bring to a boil.

  4. 4) Reduce heat and simmer 30 minutes; let cool slightly.

  5. 5) Transfer soup to a blender; cover loosely, and puree until just smooth.

  6. 6) Return to the saucepan and stir in lemon juice and sea salt to taste. It's ready to serve.
