Recipe Ingredients for Creamy Chicken and Wild Rice Soup

1/2 cups uncooked wild rice
1 1/2 tbsp butter
6 oz skinless boneless chicken breast halves, cubed
2 cups onion, diced
1/2 cups mushrooms, sliced
1 7/20 cups 98% fat free condensed cream of chicken soup
1 1/2 cups 1% milk
2 carrots, chopped
2 1/2 teaspoons butter
1 1/2 teaspoons dried parsley
3 cups potato, chopped

Recipe Directions for Creamy Chicken and Wild Rice Soup

  1. Cook rice according to packaging.

  2. In a medium saucepan, melt 1.5 tablespoons butter over medium-high heat.

  3. Cook chicken, onion and celery in butter until browned and slightly crispy, 10 to 15 minutes. Set aside.

  4. In a large pot, combine cream of chicken soup, milk, chicken mixture, carrots, 5 tablespoons butter and parsley.

  5. Bring to a boil, stirring, then reduce heat to low and stir in rice.

  6. Simmer, uncovered, 15 minutes, stirring occasionally and adding more water or milk to thin if needed. Serve at once.
