Recipe Ingredients for Creamy Chicken Tortilla Soup{Less Sodium}

6 c tomatoes, chopped
8 oz green chilies
1/2 c onion, chopped
16 oz chicken broth, no salt added
7 1/2 oz black beans
1 1/2 c corn, frozen
2 c cooked chicken, shredded
1 T chili powder
1/2 T cumin
1/2 T cilantro

Recipe Directions for Creamy Chicken Tortilla Soup{Less Sodium}

  1. Combine tomatoes, chilies and broth in large saucepan.

  2. Stir in beans and corn, cut off the cob.

  3. Bring to a boil; reduce heat to low and simmer stirring often.

  4. Add chicken; heat through.

  5. Serve with tortilla strips, or corn chips(crushed), reduced fat montery jack cheese (or whatever kind you like), and reduced fat or fat free sour cream. Sometimes I just add fresh squeezed lime juice. Don't forget to add these "extras" to the count!
