Yummy enchiladas in a cream sauce

Recipe Ingredients for Creamy Chicken and Spinach Enchiladas

3 1/2 cups chicken
10 oz spinach
8 oz fat free yogurt
16 oz Dairyland light sour cream
1 cup 1% milk
4 tbsp flour
1/2 tsp cumin
1/2 tsp salt
1/2 cup shredded cheese
8 flour tortillas

Recipe Directions for Creamy Chicken and Spinach Enchiladas

  1. Cook and shred chicken. Squeeze water from spinach. Mix together.

  2. Mix yogurt, sour cream, milk, flour, cumin, and salt.

  3. Pour 1/2 sauce into chicken/spinach and stir.

  4. Spoon chicken mixture into tortillas, roll and place in long pan. Pour remaining sauce over top. Bake at 350 for 20-25 minutes. Sprinkle cheese over top for 2-3 minutes.
