Yummy enchiladas with a creamy sauce.

Recipe Ingredients for Creamy Chicken and Spinach Enchiladas

1 lb boneless skinless chicken breasts
10 oz frozen chopped spinach, thawed
16 oz light sour cream
1/2 cup plain fat-free yogurt
4 tbsp flour
1/2 tsp ground cumin
1/2 tsp salt
1 cup skim milk
8 flour tortillas
2/3 cup shredded cheese

Recipe Directions for Creamy Chicken and Spinach Enchiladas

Cook and shred chicken. Break apart spinach as you add to the chicken, mix, and set aside. In medium bowl combine the sour cream and the next 5 ingredients. Pour half the sauce over the chicken mixture. Spoon filling into tortillas and wrap. Place into greased pan. Pour remaining sauce over top. Bake at 350 degrees for about 25 minutes. Top with shredded cheese, allow to melt in the oven or let stand for 5 minutes.
