Recipe Ingredients for Creamy Chicken Soup with Rice and Vegetables

6 c chicken broth
1/2 c uncooked rice
3 medium carrots
3 stalks celery
2 small zucchini
6 tbsp. butter
6 tbsp. flour
1 pint half and half
4 cups chicken
1/2 green onion

Recipe Directions for Creamy Chicken Soup with Rice and Vegetables

In large pot, boil chicken broth. Add rice and simmer for 10 minutes. Add vegetables and simmer until tender. In a small pan over med heat, melt butter. Blend in flour and cook till bubbly. Gradually add half and half. Add one cup of chicken broth mixture. Boil until thickens, then stir into soup. Add chicken and green onion. Salt and pepper to taste. Makes 6-8 servings
