Chicken, vegetables, and whole wheat pasta served cold in a creamy ranch dressing

Recipe Ingredients for Creamy Chicken Pasta

2 cup, chopped or diced Chicken, Breast, Meat Only
13.25 oz Whole Wheat Rotini
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
16 oz Broccoli Florets
1 cup (8 fl oz) Yogurt, Plain, Low Fat, 12 Grams Protein Per 8 Ounce
0.5 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
0.5 tsp Parsley, Dried
0.5 tbsp Chives, Freeze-dried
0.25 tsp Dill Weed, Dried
0.5 tsp Onion Powder
0.125 tsp Salt, Table

Recipe Directions for Creamy Chicken Pasta

  1. Place four skinless, boneless chicken breasts in 4 quarts water.

  2. Add 1 tsp each of garlic powder, onion powder,paprika, black pepper, and cumin.

  3. Boil until done, about 10-15 minutes.

  4. Drain, and let cool. Then, chop into bite-size pieces.

  5. Meanwhile, cook whole wheat rotini pasta according to directions, without addng salt. Drain and rinse with cold water.

  6. Seed and devein both peppers. Chop into a small dice.

  7. Steam broccoli according to package directions.

  8. Toss all together in a large bowl. Cover and refrigerate.

  9. In another bowl, combine yogurt, buttermilk, parsley, chives, dill weed, remaining garlic and onion powders, salt, remaining black pepper, and remaining cumin and paprika, Whisk until smooth. Cover and refrigerate.

  10. When ready to serve, whisk dressing again and pour over chicken and other ingredients. Serve immediately.
