Chicken breast in a creamy mushroom sauce with bacon.

Recipe Ingredients for Creamy Chicken and Mushroom

400 g chicken breast fillets
1 large onion
50 g lean back bacon
1 tbsp canola oil
200 g mushrooms
1/2 cup chicken stock
2 tbsp light sour cream

Recipe Directions for Creamy Chicken and Mushroom

  1. Dice the chicken breast, chop the onion very fine and cut the bacon into strips. Cut the mushrooms into slices or quarter them.

  2. Gently heat the canola oil and fry the onion.

  3. Add the chicken and bacon and keep turning. Once the chicken is lightly browned add the stock and mushrooms.

  4. Season with salt and pepper to taste and simmer for 15 to 20 minutes in the pan without a lid. The liquid should reduce down to a few tablespoons. If it is still very thin you can add a tsp of corn flour disolved in a little water to thicken the sauce at this point (log extra calories.

  5. Turn off the heat, add the sour cream and serve. A little chopped parsley makes a nice garnish.
