2 lb. uncooked boneless, skinless chicken breasts 4 oz Low fat cheddar 1 Can Campbells Healthy Request Cream of Chicken Soup 8 La Tortilla Factory Smart/Delicious taco size tortillas 1 4 oz can diced green chilies 1 cup fat-free sour cream

Recipe Ingredients for Creamy Chicken Enchiladas (ww)

2 lb uncooked boneless, skinless chicken breasts
4 oz Low fat cheddar
1 can Cream of Chicken Soup
8 flour tortillas
4 oz diced green chilies
1 cup fat-free sour cream

Recipe Directions for Creamy Chicken Enchiladas (ww)

Preheat oven to 350 degrees. Light spray 9x13 baking dish with nonfat cooking spray. Place chicken in pot and cover with water. Bring water to a boil over high heat; reduce to medium-high and cook 25 to 30 minutes., until chicken is tender and cooked through. Remove chicken from pot and cool slightly. Shred chicken or cut into small chunks. and place in medium bowl. Toss with cheese. In a small bowl, combine soup, chilies, and sour cream and blend well. Divide chicken mixture evenly among tortillas and roll up. Place seam-side down in baking dish. Pour soup mixture over tortillas. Bake in preheated oven 25 to 30 minutes, until cheese is melted and enchiladas are heated through.
