Non-Red Sauce Based Chicken Enchilada

Recipe Ingredients for Creamy Chicken Enchiladas

10 3/4 oz 98% Fat Free Cream of Chicken Soup
12 oz Chicken
2 oz Cilantro
12 tortilla Life Balance Flour Tortillas
12 oz Old El Paso Thick N Chunky Salsa Mild
1/2 cup chopped raw Grape Tomatoes
1 cup,+shredded+or+chopped Lettuce
1/2 cup, chopped Onions
1 cup fat free sour cream
4 oz Colby & Monterey Jack

Recipe Directions for Creamy Chicken Enchiladas

  1. Cook and chop chicken.

  2. Combine chicken, cream of chicken soup, sour cream, half of the cilantro and shredded cheese.

  3. Divide amongst tortilla shells.

  4. Wrap and place seam down in a 13x9 baking dish.

  5. Top with salsa.

  6. Bake covered @ 350 for 20 minutes.

  7. In the mean time, chop the tomatoes, onion, and lettuce.

  8. Remove cover and bake 5 more minutes.

  9. Add toppings and enjoy.
