Recipe Ingredients for Creamy Chicken Enchiladas

2 c Chicken
1 c (8oz) Cream Cheese
4 1/2 oz Diced Green Chilies
20 oz Green Enchilada Sauce
6 Flour Tortillas
1 c (4 oz) Cheddar Cheese
4 1/2 oz Black Olives

Recipe Directions for Creamy Chicken Enchiladas

  1. Pre-Heat your oven to 400 degrees.

  2. In a large skillet cook chicken until no longer pink. Shred the chicken (with a fork) so that it has a stringy texture and there are no large chucks, then place chicken back in to skillet. Add the cubed cream cheese, diced green chilies, ˝ can of enchilada sauce, and optional ingredients. Cook over medium heat until all ingredients are combined well and the cream cheese is melted.

  3. Spoon the chicken filling it to the tortillas. Roll up the tortilla and place it in a baking dish seam side down. Repeat this step for the remaining tortillas. Pour the remaining green enchilada sauce over the top and sprinkle with shredded cheese.

  4. Bake for 15 to 20 minutes or until hot and the cheese is completely melted
