Recipe Ingredients for creamy chicken curry

400 g skinless chicken breast
1 mushroom
1 onion
30 g green capsicum
30 g red capsicum
2 tsp curry powder
1 tsp ground ginger
2 tsp turmeric
1 tsp garam masala
1 tsp cumin
1 tsp coriander
100 ml double cream
150 ml chicken stock
2 cups rice
3 garlic cloves
40 g prawns

Recipe Directions for creamy chicken curry

  1. boil rice and set to one side when cooked and allow to cool.

  2. fry all spices in a pan until smoking hot, add chicken pieces and fry till browned.

  3. add onions and mushrooms and fry for another 3 mins.

  4. add chicken stock and simmer for 30 mins

  5. when reduced add capsicums and cream and simmer for a further 5 mins.

  6. fry rice in hot oil for 5 mins, add 1 boiled egg and prawns and a splash of soya sauce.
