Yummy! Great take on enchiladas, from the back of the can, edited only to use lower calorie cream cheese.

Recipe Ingredients for Creamy Chicken and Chile Enchiladas

1 lb boneless skinless chicken breast
8 oz kraft reduced fat cream cheese
4 1/2 oz old el paso green chiles
300 grams old el paso flour tortillas, 6 inch
20 oz. old el paso green chile enchilada sauce
3 oz shredded cheddar cheese

Recipe Directions for Creamy Chicken and Chile Enchiladas

  1. Preheat oven to 400 degrees, spray 13x9 glass baking dish with spray

  2. Cook chicken (poach or grill or stir fry), shred or slice into strips. Mix in cream cheese and chiles (I sometimes add diced jalapeno as well or sliced green/red peppers). Cook and stir until melted and blended.

  3. Spoon evenly into tortillas, roll and place seam side down into baking dish. Pour enchilada sauce over top, sprinkle with cheese. (It tastes fine to cut out the cheese to reduce over all calories by about 300, or 50 per serving). Bake 15 to 20 minutes until hot and cheese is melted.

  4. Serving size: 2 tortillas, total 12 tortillas (using 6 inch tortillas)
