A deliciously, satisfying low fat, low sodium soup.

Recipe Ingredients for Creamy Cauliflower Soup

1 medium head raw Cauliflower
1 cup Leeks, (Bulb And Lower Leaf-portion)
3 medium raw Carrots
6 medium stalk, raw Celery
2 clove Garlic
1 medium raw Onion Yellow
6 serving Cream Cheese Light

Recipe Directions for Creamy Cauliflower Soup

Chop veggies, except cauliflower, and add to pot sauteing gently with garlic. Add bouillon, if desired, and other seasonings (basil, thyme, etc), salt and pepper to taste. Add cauliflower and water to cover veggies. Cook until soft. Add cream cheese, stir until disolved and blend until mostly creamed. Serve with croutons if desired.
