Recipe Ingredients for creamy cauliflower soup.

2 tsp olive oil
3 tbsp white onion
3 tbsp celery stalk, finely chopped
5 mushroom
2 cups cauliflower
3 cups chicken broth, low sodium
1 cup zucchini
6 tbsp low fat sour cream
1/2 tsp thyme
1/2 tsp fresh ground black pepper (to taste)

Recipe Directions for creamy cauliflower soup.

  1. bring olive oil to heat in bottom of sauce pan,

  2. braze thin sliced onion, celery stalk~leaves preferred, a finely chopped mushroom, and black pepper.

  3. add stock to this mixture as needed. when onions are translucent,

  4. add more stock, cauliflower, and a few minutes later, zucchini if you like them.

  5. once cauli's are cooked, remove part of soup from pan, both broth and veggie matter, and blend with low fat sour cream (or cream cheese!)

  6. add creamy mixture back to pot, stir, check seasonings, and once your happy, serve!

  7. a 1/3 oz crumbled feta cheese on top is pretty good too. adds about 23 calories per serving.
