Yummy Fit For Life Cauliflower Soup

Recipe Ingredients for Creamy Cauliflower Soup

2 tablespoons butter
1 tablespoon olive oil
1 medium onion
1 clove garlic
2 stalks celery
1639 grams of cauliflower
1/2 teaspoon salt
1/2 teaspoon curry powder
1/8 teaspoon black pepper
1/2 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried savory
6 cups water
36 grams vegetable bouillon

Recipe Directions for Creamy Cauliflower Soup

In heavy soup kettle, melt butter. Add oil. Add oninon, scallions (6-8 which I didn't include in the original recipe cuz I didn't have them at the time), and garlic. Add celery adn cauliflower. Add seasonings. Mix well and cook, uncovered, over medium heat for several minutes, stirring frequently. Add water and and vegetable boullion. Bring to a boil. Simmer, covered, over medium heat for 15 minutes or until cauliflower is tender. Remove cover and cool slightly. Puree in small increments in blender until smooth and creamy. Reheat, adding fresh ground nutmeg, 1/8 teaspoon, if desired. Serves 4.
