Recipe Ingredients for Creamy Cauliflower Soup

1 medium onion, coarsely chopped
1 cup celery, diced
2 cups swiss chard, diced
2 carrots, diced
1 head cauliflower, cut into 1 inch florets
2 cups white kidney beans, boiled
1 cup almond milk
4 cups water
1/4 teaspoon freshly ground pepper
2 teaspoons ground cumin
1/4 cup nutritional yeast
1 T miso paste
1 cup mushrooms, sauteed in water
1 cup diced tomatoes

Recipe Directions for Creamy Cauliflower Soup

  1. Saute onion and celery in a small amount of water.

  2. Add remaining ingredients, except nutritional yeast and miso paste, mushrooms and tomatoes.

  3. Cook until vegetables are tender.

  4. Blend all ingredients in food processor or blender until thick but not completely smooth (remove 1/2 of cauliflower and swiss chard first, if desired, to add back).

  5. Stir remaining cauliflower and chard back in.

  6. Stir in nutritional yeast and miso paste (dissolve in small amount of broth first) before serving.

  7. Top with sauteed mushrooms and diced tomatoes.
