Recipe Ingredients for Creamy Carrot & Ginger Soup

500 g carrots
1 cup celery
410 g tinned tomatoes
1 large onion
2 cloves garlic
1 tbsp fresh ginger
1 bouillon cube
2 l water
340 g evaporated skim milk
1 tsp crumbled bay leaf
1 tsp salt
1 tsp pepper

Recipe Directions for Creamy Carrot & Ginger Soup

  1. Chop all vegetables roughly.

  2. Place all ingredients in pot (except milk) with water and stock and bring to boil.

  3. Simmer until vegetables are tender.

  4. Blend until smooth and then add evaporated milk and stir until combined.

  5. Season to taste
