Recipe Ingredients for Creamy Carrot & Ginger Soup with Coconut Curry

139 g onion
198 g celery
404 g carrot
384 g acorn squash
10 g garlic
30 g ginger
400 ml lite coconut milk
700 ml water
5 g curry

Recipe Directions for Creamy Carrot & Ginger Soup with Coconut Curry

  1. Cut squash in half and remove seeds. brush with oil and place cut side down on a baking sheet, roast about half an hour at 350 until soft.

  2. Add about 1 litre of water to soup pot. Chop onion and celery, add to pot, begin cooking over medium heat. Grate carrots and add to pot. Scoop flesh out of squash shell and add to pot. Simmer about 30 minutes.

  3. Finely chop garlic and peel and finely chop or grate ginger. add.

  4. Add coconut milk.

  5. Add Curry Powder, Black Pepper, and Dried Ginger to taste.

  6. Add salt to taste OR use chicken stock in lue of water when starting soup.
