Whole wheat penne and veggie sausage in a creamy tomato sauce.

Recipe Ingredients for Creamy Cajun Pasta

13.5 oz Whole Wheat Penne
28 oz Crushed Tomatoes
14 oz Fire Roasted Diced Tomatoes
2 serving Tofurkey Kielbasa
10 tsp Sour Cream
1 cup, chopped Peppers, Sweet, Red
1 cup, chopped Onions
0.1 cup Whole Wheat Flour

Recipe Directions for Creamy Cajun Pasta

  1. Bring a pot of salted water to boil and cook pasta according to package directions..

  2. Meanwhile, heat a small amount of oil in a large pot.

  3. Add the sausage and onion and cook, stirring frequently for 2-3 mins.

  4. Add the red peppers and cook until soft. Approx. another 3-4 mins.

  5. Sprinkle the mixture with flour and stir to coat.

  6. Add tomatoes and their juices and mix everything together.

  7. Cook, stirring frequently until sauce thickens. About 2-3 mins.

  8. Remove from heat and stir in sour cream and pasta.

  9. Mix well to incorporate everything.
