Recipe Ingredients for Creamy Butternut Squash Soup

4 cup, cubes Squash, Winter, Butternut
1 serving Extra Virgin Olive Oil
2 cup Soup, Chicken Broth
1 tsp Nutmeg, Ground
1 dash Salt, Table
2 dash Pepper, Black
2 clove Garlic
1 medium Onions
1 cup, chopped Carrots
1 tbsp Butter
1.5 tbsp Honey
12 tbsp Whipping Cream

Recipe Directions for Creamy Butternut Squash Soup

Preheat oven to 400. Peel and dice squash. Place on baking pan drizzle with Evoo, salt, pepper & nutmeg. Bake for 20 mins. Dice onion and carrots, saute in butter until tender Add chopped garlic. Let cool add to blender along with squash. Add 2 cups chicken broth blend together. Transfer to sauce pan. Stir in 12 tbsp of whipping cream or half and half. Add 1.5 Tbsp of honey.Cook for 15 mins. Garnish with Parsley.
