If you have cream cheese in your refrigerator, you probably need to counterbalance your past transgressions with this soup.

Recipe Ingredients for Creamy Broccoli Soup

2 lbs broccoli
1 quart vegetable broth
2 oz cream cheese
1/2 cup plain yogurt
4 cloves garlic, crushed *
1/4 tsp black pepper
1 Salt, to taste

Recipe Directions for Creamy Broccoli Soup

  1. Boil broccoli in broth 'til soft enough to mash with a fork, about 10m. Without draining, do just that.

  2. Add remaining ing.s, stirring until cream cheese melts. Cool a bit before pureeing in batches. You may need to add a bit more broth to bring to desired consistency. Pour back into the soup pot to reheat. Season to taste with salt and pepper.

  3. Transfer to serving bowls, and garnish with a drizzle or dollop of yogurt and some freshly ground black pepper.

  4. *To crush garlic: Smash unpeeled cloves with the flat of a chef's knife. This will make them easy to peel. Peel. Mince. Sprinkle with salt. Now, the tricky part: Spread minced garlic out thinly with the flat of your knife and proceed to macerate it with a continuous, downward pressing motion of the sharp end of the knife. You will be holding the handle of the knife and flicking it upward with one hand while you press down on the blade with the other hand. Your hands are working against each other. You will be moving the knife in a fan shape. Re-spread the garlic and continue until you've worked it into a paste. Less wasteful and messy than a garlic press.
