Simple, not very complicated. Might add some cheese to see what that does. :)

Recipe Ingredients for Creamy Broccoli & Cauliflower Soup

1 medium potato
1/4 cup celery, sliced
3 cups broccoli florets
2 cups cauliflower florets
1 cup water
1 1/2 cup skim milk, divided
3/4 teaspoon dried basil
1/4 teaspoon dried tarragon
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup shredded cheddar cheese

Recipe Directions for Creamy Broccoli & Cauliflower Soup

  1. place potatoes, celery, broccoli and water in a large pot. Bring to simmer. Cover & cook over medium heat for 10 minutes, or until potato chunks are tender and not over cooked.

  2. transfer about 3 cups to blender. Add milk, spices and blend until smooth. Pour blended mixture into a clean pot.

  3. depending on your taste, you can continue blending so everything is smooth, or leave some chunks.

  4. heat gently, stirring frequently, until steamy.

  5. serve with sprinkled cheddar cheese on top.
