Very hearty soup. I like to add leftover chicken, ham or turkey kielbasa and a little white wine for added flavor.

Recipe Ingredients for Creamy Bean Soup

1 cup carrots, chopped
1 cup celery, chopped
1 cup onion, chopped
1 garlic clove, minced
3 cups chicken broth, light
1/2 teaspoon thyme
1/2 teaspoon oregano
1 teaspoon parsley
1/2 teaspoon black pepper
30 ounce Great Northern beans
2 cups spinach leaves
1/4 cup evaporated milk

Recipe Directions for Creamy Bean Soup

  1. Heat a large saucepan coated with cooking spray over medium-high heat. Add carrots, onion, and celery. Sauté 3 minutes, stirring occasionally. Reduce heat to medium; add garlic and 1/2 cup broth cook 5 minutes.

  2. Add remaining broth,seasonings and beans. Bring to a boil, reduce heat, and simmer 10 to 15 minutes. Add the spinach, stirring until spinach wilts. Add milk and remove from heat.

  3. Using hand blender, puree to desired smoothness. Garnish with fresh parsley or a few bacon bits.

  4. Notes: If you prefer chunkier soup, puree one can of beans in blender before adding to soup and leave one can whole.
