Really good comfort food, fantastic homemade taste... a great accompaniment for lean meat or fish and steamed veggies.

Recipe Ingredients for Creamy Au Gratin Potatoes

4 russet potatoes, sliced
2 cloves garlic, minced
3 tbsp butter
3 tbsp flour
1/2 tsp salt
2 cups skim milk
2 cups cheese, cheddar, shredded
3 oz cheese, swiss, sliced
1/2 cup cheese, parmesan, shredded
2 tbsp paprika
4 tbsp black pepper

Recipe Directions for Creamy Au Gratin Potatoes

  1. Preheat oven to 400 degrees F (200 degrees C). Butter a 1 quart casserole dish.

  2. Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with 1/2 of the minced garlic and season with salt and pepper.

  3. In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour 1/2 of the cheese sauce over the potatoes, the top with the remaining potatoes and garlic. Season again with salt and pepper, then cover with remaining cheese sauce. Cover the dish with aluminum foil.

  4. Bake 1 hour in the preheated oven.

  5. Reduce the heat to 375 (350 if the bottom and sides are already really brown) and remove from the oven. Uncover, then top with the provolone cheese strips, grated parmesan and paprika (in that order). Return to the oven and cook 30 minutes more, until the cheese is nice and brown on the top, side and bottom.
