Healthy version of a yummy spring favorite!

Recipe Ingredients for Creamy Asparagus Soup (without the cream!)

2 lbs. asparagus spears, fresh
1 large onion, diced
4 T. vegetable oil
6 c. chicken broth, low sodium, fat free

Recipe Directions for Creamy Asparagus Soup (without the cream!)

  1. Cut the tips off of the asparagus spears and set aside.

  2. Cut off the woody bottom of each spear and discard.

  3. Cut remaining spears into 1" sections.

  4. Cook onion and asparagus in oil in a large fry pan over medium heat, stirring often till softened.

  5. Pour this into a large saucepan and add the chicken broth. Simmer over medium-low heat 15 - 20 minutes.

  6. Puree soup in a blender until smooth.

  7. Pour back into saucepan and add the asparagus tips. Cook for 10 minutes longer.

  8. Ladle into bowls and season with salt and pepper as desired.
