Creamy low calorie soup. For richer soup, replace the half and half with cream. For lower fat soup, replace the half and half with 2% or skim milk.

Recipe Ingredients for Creamy Asparagus Soup

10 spears (one bunch) asparagus, ends trimmed
2 tbsp unsalted butter
1 medium onion, diced
3 cups chicken broth
1 potato, medium, peeled and diced
1/4 tsp salt
1/4 tsp dried dill
1/8 tsp pepper
1/2 cup half and half

Recipe Directions for Creamy Asparagus Soup

  1. Cut tips from asparagus and set aside. Chop remaining stalks into ½ inch pieces. Melt butter in 4-quart sauce pan over medium heat. Add onion and cook three minutes. Add asparagus stalks and cook an additional 2 minutes. Add broth, potatoes, salt, dill and pepper. Bring to a boil. Reduce heat to medium high and cook 10 -12 minutes, uncovered or until potatoes are very tender.

  2. Meanwhile, place tips in small glass bowl with 1 tbsp water. Cover with plastic wrap and microwave on high one minute.

  3. Remove soup from heat and puree until smooth. Stir in cream and serve warm or chilled garnished with tips.
