When trying to stick to a gluten-free diet, I tried different rice puddings and created this one to cut down on calories and suit my taste. It is a creamy pudding, just be sure to stop cooking it when it still looks too soft. The pudding will thicken as it cools.

Recipe Ingredients for Creamy Arborio Rice Pudding

1/2 cup Arborio rice
1 cup water
1/4 teaspoon salt
2 cups 1% milk
2 tablespoons sugar
1/2 cup raisins
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 nutmeg to taste

Recipe Directions for Creamy Arborio Rice Pudding

  1. Bring water, sugar, and salt to a boil in a medium saucepan. Add the rice, return to a boil, and then reduce the heat to the lowest setting. Stir occasionally to keep it from sticking to the bottom, Taste the rice to check for doneness. The rice should be very soft.

  2. In a separate saucepan or in the microwave, heat the milk. Add to the cooked rice and cook at a simmer over low heat until rice absorbs most of the milk and mixture starts to get thick, about 15 to 20 minutes. The pudding will thicken as it cools.

  3. Transfer pudding to a large bowl. Add vanilla, cinnamon, nutmeg, and raisins. Cool to room temperature. Place in refrigerator until cool and set.
