Reduced calorie and lowered fat Alfredo Sauce that even my hubby likes. :)

Recipe Ingredients for Creamy Alfredo Sauce - Reduced Calorie, Lower Fat

3 tsp Minute Tapioca, pulverized
2 cup Milk, Reduced Fat, Fluid, 2% Milkfat
2 tsp Garlic Powder, no salt added
1 1/2 serving size Light Swiss Original, Laughing Cow Cheese
2.67 oz (1/3 cup) Fat Free Cream Cheese
1/2 cup Parmesan, Grated Cheese
1/4 tsp Black Pepper

Recipe Directions for Creamy Alfredo Sauce - Reduced Calorie, Lower Fat

  1. Whirl tapioca in a spice grinder to make tapioca flour.

  2. In a medium sized saucepan, combine the tapioca flour, milk, garlic, and tsp pepper together over high heat.

  3. Bring to a boil, stirring constantly.

  4. Turn heat down to medium.

  5. Add the three cheeses to the saucepan. Stir until the cheeses melt and are well combined into the sauce. Continue cooking on low heat until sauce is the thickness you like.

  6. Serve sauce over hot pasta or spaghetti squash.

  7. Garnish with a sprinkle of parsley.

  8. Serve warm and enjoy!

  9. Makes close to 3 cups. I used 1/2 cup as a serving size.

  10. NOTE: Save 17 calories per serving by using Light Soy Milk (70 calories per cup).
