This is "creamy" and tangy without using any cream. It uses crumbled bread instead. It's an easy recipe and the taste holds up in the freezer.

Recipe Ingredients for Creamless Creamy Tomato Soup - Cook's Illustrated

1/4 c olive oil
1 medium onion, chopped
3 cloves , garlic, chopped
1 T , bay leaf (not cumbled, but it's the only way I could get it into the recipe)
56 oz tomatoes
3 t , brown sugar
2 c chicken broth
3 slices

Recipe Directions for Creamless Creamy Tomato Soup - Cook's Illustrated

  1. Heat 2 T oil in Dutch oven over medium-high heat until shimmering. Add onion, garlic, red pepper flakes (if using), and bay leaf.

  2. Cook, stirring frequently until onioin is translucent, 3 - 5 minutes.

  3. Stir in tomatoes and their juice.

  4. Using potato masher, mash until no pieces bigger than 2 inches remain.

  5. Stir in sugar and bread.

  6. Bring soup to boil. Reduce heat to medium and cook, stirring occasionally, until bread is completely saturated and starts to break down, about 5 minutes.

  7. Remove and discard bay leaf.

  8. Using immersion mixer (or blender), blend until smooth and creamy.

  9. Stir in chicken brouth and brandy (if using).

  10. Return soup to boil; season to taste with salt and pepper.
