Breakfast supper.Note:try roma tomatoes, so it won't be as watery.

Recipe Ingredients for Creamed veggies & eggs

4 large Egg, White
1 tbsp Salted Butter
2 cup, chopped Kale
3 cloves Garlic
1/4 cup Whole Milk
1 cup, chopped Tomatoes, Red, Ripe
2 cup Spinach
1/4 tsp Kosher Salt

Recipe Directions for Creamed veggies & eggs

  1. Preheat oven to 350 degrees and adjust rack to middle postion.

  2. Melt butter in a large oven proof skillet over medium heat and swirl to coat the bottom of the pan.

  3. Add garlic, kale,spinach, and salt.Stir occasionally and cook about 5 min.

  4. Stir in milk and cook for about 1 minute until hot.

  5. Add tomatoes.

  6. Crack eggs over vegetable mixture and place skillet in the oven.

  7. Bake for about 8 minutes, until whites are cooked and yolks are still runny.

  8. Serve immediately.
