Makes 3 servings



A low-carb creamed vegetable with good protein source. Can substitute celery or cauliflower florets 1:1 for spinach. The cream is bland w/o the grated cheese, but you can leave it out or use Parmesan or Romano.

Recipe Ingredients for Creamed Spinach & Tofu

8 tbsp onion, diced
10 oz spinach, frozen
1 tbsp sour cream
1 tsp nutmeg
9 oz tofu, firm, light
1/2 oz asiago, aged cheese

Recipe Directions for Creamed Spinach & Tofu

  1. Thaw spinach.

  2. Saute onion with cooking spray until lightly browned.

  3. Add vegetable and 3/4 c water, add lid to steam about 5 minutes.

  4. Remove lid and add crumbed tofu. Boil off liquid, then stir in sour cream and nutmeg.

  5. Remove from heat, add cheese (1/2 ox = 2 Tbsp grated).

  6. Add pepper to taste.
