Recipe Ingredients for Creamed Spinach with Cheddar

7 oz baby spinach, washed and trimmed
1 c fresh breadcrumbs, toasted
2 T minced onion
1 c half and half
1 large egg, beaten
1 T minced parsley
1/4 tsp ground nutmeg
1/2 tsp salt
1/8 tsp pepper
1/4 cup shredded cheddar
1/4 cup Gruyere cheese, shredded
1/8 tsp paprika
20 cherry tomatoes, halved and roasted

Recipe Directions for Creamed Spinach with Cheddar

  1. Put the tomatoes on a baking sheet, drizzle with olive oil, and roast in 350 degree oven for 20-25 minutes. Set aside for later.

  2. Grease a 2 quart casserole dish.

  3. Chop the spinach into 2" pieces and place them in a medium bowl with the bread crumbs and onion.

  4. In another bowl, whish together the half and half and egg.

  5. Add the parsley, nutmeg, salt, and pepper. Stir.

  6. Pour the liquid over the spinach mixture. Toss evenly to coat.

  7. Spoon the spinach into the caserole and sprinkle with the cheese and paprika.

  8. Place the roasted cherry tomatoes on top.

  9. Place the casserole in 350 degree preheated oven and bake for 35-40 minutes or until set.
