Add more hot spices, Tabasco sauce and/or garlic if you like it spicier. Also you can uses 1 sweet yellow pepper in place of the same quantity of green pepper. Serve with Wild Rice Mix and/or 1 Tbs Sour Cream.

Recipe Ingredients for Creamed Kidney Bean Soup

380 g kidney beans, cooked
1 large Onion
3 clove Garlic, crushed
2 Hot Peppers, diced
1 large Tomato, diced
2 tbs Olive Oil
1 1/2 medium Green Pepper, diced
1 tbs Oregano
1 Salt to taste
6 cups Water

Recipe Directions for Creamed Kidney Bean Soup

  1. Saute diced onion in a little water until transparent.

  2. Add all the rest of the ingredients but about 1/2 the sweeter peppers (or you can add all the ingredients and take some out just before blending. Cook until tender.

  3. Blend soup with an immersion blender until smooth, adding water if it's too thick.

  4. Continue heating on the stove and add the remaining peppers.

  5. Cook until these are tender.

  6. Serve with 1 Tbs Sour Cream for a spicy-sour taste.
